Our super easy pea soup recipe with leeks is ridiculously simple to make, uses frozen peas for speed and is literally ready in less than 30 minutes.

It’s a delicious, warming soup that’s just so perfect for dunking your cheese sandwiches into.

Equipment Needed To Make Pea Soup

  • Chopping board
  • Vegetable knife
  • Colander
  • Saucepan with a lid
  • Tablespoon
  • Kettle
  • Cooking spoon
  • Food processor or blender

Pea And Leek Soup Ingredients

You’ll really only need a handful of ingredients to make this easy soup with leeks.

  • 1 tbsp olive oil
  • 2 leeks – outer leaves removed, trimmed and washed carefully. For tips on how to prepare leeks check our guide here.
  • 450g frozen peas
  • 2 medium potatoes – peeled and chopped into small cubes
  • 2 vegetable stock pots – we use the Knorr vegetable stock pots here.
  • 750ml boiling water
  • Pinch of salt – you may not need to add this, it depends how salty the stock is that you use.
  • Pinch black pepper

How To Make Pea And Leek Soup

This pea soup recipe is really easy to make – so simple!

Step One – fry the leeks

  • Add the olive oil to a saucepan and put on the hob over a medium heat. Fry the leeks in the oil for around 5 minutes to soften them.

Step Two – add the rest of the pea and leek soup ingredients

  • Then pour in 750ml of boiling water from the kettle. Give everything a good mix together to dissolve the stock pots.

Step Three – cook the leek and pea soup

  • Put the lid onto the saucepan and bring the pea soup to the boil. Then reduce the heat to a simmer and cook for around 20 minutes or until the potatoes are tender.

Step Four – blend the pea and leek soup

  • Use a blender to blitz the potato pea soup into a smooth puree.

Cooks Note! Only use hot liquids in food processors that are designed for use with hot liquids. Otherwise, wait until the liquids have cooled before blending.

  • Check the seasoning and add more salt or some black pepper if you wish.

Step Five – serve the pea and leek soup

  • Ladle the soup into bowls and add any toppings you like.

Pea And Leek Soup

A delicious, easy pea soup recipe that's perfect with some crusty bread smothered with butter and stuffed with wedges of cheese.

Ingredients

  • 1 tbsp olive oil
  • 2 leeks - washed, trimmed and sliced
  • 450g frozen peas
  • 2 medium potatoes
  • 2 vegetable stock pots
  • 750ml boiling water

Instructions

  1. Add the olive oil to a saucepan and put on the hob over a medium heat. Fry the leeks in the oil for around 5 minutes to soften them.
  2. Tip in the diced potatoes, frozen peas and stock pots.
  3. Then pour in 750ml of boiling water from the kettle. Give everything a good mix together to dissolve the stock pots.
  4. Put the lid onto the saucepan and bring the pea soup to the boil. Then reduce the heat to a simmer and cook for around 20 minutes or until the potatoes are tender.
  5. Use a blender to blitz the potato pea soup into a smooth puree.
  6. Check the seasoning and add more salt or some black pepper if you wish.
  7. Ladle the soup into bowls and add any toppings you like.
