Easy Sausage Breakfast Casserole

Honestly I can't tell you how much I love breakfast casserole! It's just the perfect easy weekend breakfast when all the kids are home. Super easy and all ready at the same time with very little prep. This is the kind of food I'm all about!

⭐️ It tastes SO good, packed with flavor! Plus you can add in any extras you fancy.
⭐️ It's high protein, so great if you're heading off to the gym!
INGREDIENTS For Sausage Breakfast Casserole
Everything you need to make this super easy breakfast.

- Olive Oil
- Sausage Meat - I buy breakfast sausages, then skin them and break up the meat
- Large Eggs
- Whole Milk - for extra indulgence you could swap this for heavy cream.
- Salt
- Black Pepper
- Dried Chives
- Cheddar Cheese - Shredded
HOW TO MAKE SAUSAGE BREAKFAST CASSEROLE
Prep Time – 10 minutes / Cook Time 45-50 minutes (approx)

- Preheat the oven and fry the sausage meat. Preheat the oven to 350F / 180C. Add the olive oil to a skillet pan and fry the sausage meat over a medium-high heat - break it up into small pieces and fry until cooked through and browning.
- Make the egg mixture - Whisk the eggs in a large bowl with the milk and half the cheese. Season with salt, black pepper and the chives.
- Make up the sausage breakfast casserole - Take a casserole dish, rub the inside with a little butter or olive oil, the grease will help to stop the casserole sticking. Then put ¾ sausage meat in the base of the casserole dish. Pour over the cheesy egg mixture.
- Bake the sausage breakfast casserole - place the baking dish in the middle of the oven and bake in the oven for around 30 minutes. Then, remove from the oven and top the casserole with the rest of the cooked sausage meat and the leftover Cheddar cheese. Put the casserole back in the oven and bake for a further 10 minutes so that the cheese melts and the sausage pieces crisp up a little.
- Serve - remove from the oven and serve. I like to serve with buttered toast on the side, and usually a drizzle of hot sauce.
INGREDIENT SWAPS AND ADD-INS
Add extra vegetables - you can add in sautéed bell peppers, spinach or mushrooms to your breakfast casserole. If I'm cooking this for brunch I often add in sautéed onions and more veggies.
Swap the pork sausage - you can swap this for chicken sausage or whatever your favourite sausage meat is.
Go more cheesy - if you love a really cheesy breakfast casserole, add in some more cheese, do and extra cup of sharp Cheddar cheese or add some of your favourite cheese in too.
Add potatoes - if you like your easy breakfast casserole to be carb'y then add in some cooked sliced potatoes or some frozen hash browns (thaw before adding)

⭐ For a more indulgent casserole swap out the milk for heavy cream and add more cheese.
⭐ Great served alongside - hot buttered toast, apple and oat breakfast muffins, chocolate and banana flapjacks or a tasty fruit platter if you're catering for a crowd.
⭐ And... if there's just two of you and. you've got an air fryer, use a third of the ingredients and cook in a foil tray in the air fryer on a lower heat for a shorter time - and just keep checking to see when it's cooked to your liking.

Easy Sausage Breakfast Casserole
A wholesome, hearty breakfast casserole to start the day off right!
Ingredients
- 1 tablespoon olive oil
- 1lb sausage meat (around 450g)
- 12 large eggs
- ¾ cup whole milk
- pinch salt
- pinch black pepper
- 2 teaspoon dried chives
- 1 cup Cheddar cheese - shredded
