Eggy bread and bacon are a match made in heaven. We top ours with fresh juicy blueberries and generous drizzle of maple syrup. Sunday brunch perfection!

Eggy bread and bacon ingredients

  • 4 slices of bread – choose whatever bread you like, I like this made with bloomer or tiger bread.
  • 4 eggs – whisked with a fork
  • 30g of butter – for frying, you can switch this to olive oil if you prefer
  • 4 slices of smoked bacon
  • 125g blueberries
  • 2 tbs maple syrup

How to make eggy bread and bacon

  • Heat the grill – get the grill turned on to a high heat.
  • Crack and whisk the eggs – whisk together the eggs and pour them onto a large plate.
  • Dip the bread – into the egg and coat both sides with the egg mixture.
  • Cook the eggy bread – melt the butter in a large frying pan and gently fry the eggy bread – turning 3-4 times as it cooks.
  • Grill the bacon – cook the bacon at the same time as you are cooking the eggy bread so everything is ready to serve together.
  • Serve the eggy bread and bacon – put the eggy bread and bacon onto plates, scatter over the blueberries and drizzle with the maple syrup.

Make eggy bread and bacon your way

  • Go veggie and skip the bacon – just top with blueberries, maybe add a sliced banana. 
  • Add a little heat with some freshly chopped chilli in the egg mixture or sprinkle over some red chilli flakes.
  • Scatter over chopped fresh mint or flat leaf parsley.
  • Cut the calories and skip the maple syrup.
