Ingredients For Fajita Baked Chicken Breast In Foil 

You’ll only need a handful of ingredients for this tasty fajita baked chicken recipe!

  • 1 tbsp olive oil
  • 2 red peppers – chunkily chopped
  • 1 onion – chopped into wedges
  • 1 green chilli – finely sliced (this is optional, if you don’t like the heat, miss it out)
  • 2 chicken breasts
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp dried onion granules
  • 1/4 tsp dried garlic powder

(you could swap the dried herbs/spices for 2-3 tsp of fajita seasoning mix if you prefer)

  • Tin foil  2 sheets
  • Teaspoon 
  • Chopping board 
  • Sharp vegetable knife 
  • Roasting tin

How To Make Fajita Baked Chicken Breast In Foil 

You are going to LOVE how easy our healthy baked chicken breast recipe is to make!

Step One – Preheat the oven

  • Preheat the oven to 200C / 400F / Gas Mark 6

Step Two – Prepare the tin foil packet

  • Take a sheet of tin foil big enough for the vegetables and chicken to lay on. Drizzle a little olive onto the centre of the foil.

Step Three – Add the fajita vegetables

  • Scatter the peppers, onions and chillies into the centre of the tin foil sheet.

Step Four – Season the chicken

  • Lay the chicken breasts on top of the chopped vegetables and sprinkle over the oregano, smoked paprika, dried onion and garlic powder. Season with salt and pepper.

Step Five – Cook the fajita baked chicken

  • Seal the foil packet – add another sheet of tin foil on top of the chicken breasts and scrunch all the edges together to form a sealed packet for the chicken to bake in.

  • How long to bake chicken in foil – put the chicken into the hot oven and cook for around 40 minutes or until the chicken is cooked through properly with the juices running clear and no pink chicken remaining. 

COOKS TIP! I find it super useful to use a meat thermometer to check the cooked temperature of the chicken breasts. You’re aiming for the temperature at the centre of the chicken breast to be a minimum of 75 – seriously the meat thermometer is total peace of mind for me especially when cooking chicken.

Step Six – Slice the chicken

  • Once the chicken is cooked through, remove it from the tinfoil parcel and place onto a chopping board to rest for 5 minutes before slicing and serving with your favourite side dishes.
