Falafel Salad

We just LOVE this Falafel Salad recipe – tasty falafel bursting with flavour served with a selection of dips and salads. Easy weeknight dinner that’s ready to eat in just 30 minutes!

So… here’s the thing we do Meat Free Monday in our house but getting the kids on board isn’t always easy!

But what they do really like is falafel as long as it comes with dips and fries. And I’m good with that. It’s a vegetarian meal I can feel good about serving, and they feel good about eating.

Our easy Falafel Salad uses cheats, because as a busy working mum, quite often I NEED THE CHEATS just to fit in time to cook.

Falafel Salad Ingredients

So, there’s no apologies here – this is a cheat meal so there’s lots of convenient ingredients that need very little preparation or cooking.

  • 1 Little Gem Lettuce – shredded
  • 1/2 Cucumber – sliced
  • 200g Baby plum tomatoes – sliced into halves
  • 30g Pitted Black Olives – sliced into halves
  • 1 tbs Italian Salad Dressing
  • 200g Baba Ganoush Dip – if you can’t find this – use hummus instead
  • 200g Tzatziki Dip – you can buy ready made or make your own using our Tzatziki recipe here
  • 250g Sachet Tilda Microwave Rice – I use tomato flavour, but just choose your favourite

You could also throw on a few finely sliced red onions and some pickled shredded beetroot if you like. Really make this salad recipe your own.

How To Make Falafel Salad

  • Preheat the oven to 210C – or the temperature on the cooking instructions of your chosen oven fries.
  • Cook the fries as per the packet instructions – this usually takes around 18 minutes
  • Assemble the salad – toss the lettuce, cucumber, tomatoes and olives together in a bowl – drizzle over the salad dressing and toss again.
  • Cook the rice – when the oven fries are almost ready cook the rice in the microwave as per the packet instructions. It usually takes around 2 minutes.
  • Make up the Falafel Salad bowls – take out four bowls and divide the salad between the bowls. Then split the rice, lay the falafel on top and spoon in the dips. Add a handful of hummus chips to each bowl.
  • Tip the smoky oven chips into a serving bowl

More Falafel Ideas

A quick and easy falafel salad bowl that's great for weeknight dinner.

Ingredients

  • 400g Falafels (ready to eat) 
  • 1 Little Gem Lettuce - shredded 
  • 1/2 Cucumber - sliced 
  • 200g Baby Plum Tomatoes - halved
  • 30g Pitted Black Olives - halved 
  • 1 tbs Italian Salad Dressing
  • 200g Baba Ganoush Dip 
  • 200g Tzatziki 
  • 250g Cooked Rice - Tilda Microwave Rice 
  • 100g Hummus Chips
  • 350g Oven Fries - to serve
