Family Meal Plan 10th September 2018

Weekly meal plan - Monday - toasted sandwiches, Tuesday - slow cooker chicken casserole, Wednesday - mince beef pie, Thursday - slow cooker chicken curry, Friday - tex mex feast, Saturday - smoky beef burritos, Sunday - roast chicken dinner

A weekly family meal plan filled with easy to make family dinner recipes – now we’re back in a school routine and it’s turned more autumnal I’m definitely making use of the slow cooker more. 

Monday – Toasted Sandwiches

Quick and easy dinner – toasted sandwiches with ham, cheese and chutney.

I’ll either make a quick salad or corncob and baked beans to go alongside. 

Tuesday – Slow Cooker Chicken Casserole 

I’m making an easy Spanish style chicken casserole with smoky paprika flavour using chicken thighs, peppers, onions, tinned tomatoes and black olives.

I’ll serve with rice or mashed potatoes – or maybe little garlicky roast potatoes, whichever I have the time to do. 

Wednesday – Mince Beef Pie 

I’ll do the minced beef pie filling in the slow cooker with onions, celery and carrots then top with ready made puff pastry and finish off in the oven.

Served with veggies and maybe mashed potatoes depending on how hungry the kids are. 

Thursday – Slow Cooker Chicken Curry

Yes – I’m using the slow cooker again! It’s just so easy for busy school days.

Tonight I’m making chicken curry and it’s a great recipe, with potatoes and spinach, always turns out great.

Friday – Tex Mex Feast

It’s a cheat dinner – I’ll be buying in ready made dirty wedges, spicy chicken, maybe some pulled pork pizza and serving with coleslaw, corn cobs and salad 

Saturday – Smoky Beef Burritos

These burritos are really easy and you can have this on the table in less than 30 minutes and it makes a great Saturday night dinner.

Sunday – Roast Chicken Dinner 

Roast chicken dinner is always the kids favourite for Sunday.

I’ll be making chicken with roast potatoes, loads of vegetables, Yorkshire puddings and rivers of gravy.
