Monday – Dirty Rice
We love this for dinner – so easy – Cajun spiced beef, veggies and rice, I’ll be adding a big green salad on the side, maybe some corn.
Tuesday – Steak and Asparagus Salad
This one is for the grown ups – slices of sirloin steak and grilled asparagus tossed together with herby salad leaves, baby new potatoes, baby plum tomatoes and red onions – dressed with a wholegrain mustard salad dressing. For this kids…. spaghetti bolognese – their favourite!
Wednesday – Tuna Nicoise
A delicious tuna and green bean salad with eggs and potatoes – so simple to make. Grab the tuna nicoise recipe here.
Thursday – Chicken Fajitas
I’m making a big chicken fajita salad – I eat this just as it is but the kids like it with wraps on the side so they can make proper fajitas. Grab the chicken fajita salad recipe here.
Friday – Chicken Kebabs
I’ll be marinating boneless chicken thighs with cumin, ground coriander, lemon, garlic and herbs, oven baked and then serving with lemon-y rice and a tahini dressing.
Saturday – Vegetarian Chilli
I’m making a quick veggie chilli – packed with peppers, sweet potatoes and black beans – served with homemade potato wedges and salad.
Sunday – Greek Lamb Stew
Skipping the roast dinner this week and cooking up a delicious Greek lamb stew – bursting with flavour and super simple to make. Grab the Greek lamb stew recipe here.
