Another family meal plan filled with easy to make family dinners. Quick to prepare and cook, making them great for busy family life, especially those school days.
Monday – meatballs with garlic bread dippers
These meatballs are really easy to make and serving with garlic bread dippers just makes the whole meal faster to prepare and get on the table. You could cheat and use shop bought meatballs if you’re short on time, but I always make the sauce so I can squeeze in extra veggies. Get the meatball recipe here.
Tuesday – spicy prawns and salad
This is a cheat recipe, I’m using Whitby Seafoods hot & spicy king prawns, they just take 8 minutes in the oven, I’ll make a big crunchy salad with lemon caper dressing to go alongside and probably a portion of potato wedges for the kids.
Wednesday – tuna pasta
Really quick spaghetti dish with marinated tuna, fresh tomatoes, olives and capers. Served with salad.
Thursday – pulled bbq pork
I’ll make this is the slow cooker, just adding the pork and a bottle of BBQ marinade, once cooked I’ll be shredding it and stuffing into brioche buns with coleslaw and corn cobs on the side.
Friday – slow cooker chicken curry
A delicious chicken curry, the recipe for this will be up on Daisies & Pie this week. It’s really easy and totally yum! Perfect for a ‘fake-out, take-out’.
Saturday – french bread pizzas
I’ll be throwing together a tray of easy french bread pizzas and serving bbq beans, coleslaw and corn cobs alongside. Get the french bread pizza recipe here.
Sunday – roast chicken dinner
It just wouldn’t feel like a Sunday without a roast dinner. Today I’m doing roast chicken, chipolatas, roast potatoes, carrot and swede mash and cabbage. I’ll maybe squeeze on a few Aunt Bessie Yorkshire puddings.
