After a break over the summer we’re back in the swing of meal planning. This week is filled with favourites and they’re all easy to make!
Monday – Spanish Rice
Our Spanish rice is a cheat recipe that’s on the table fast! Packed with delicious Spanish flavours and totally moreish. I just serve this with a simple salad, maybe some crusty bread depending on how hungry the kids are. Get the Spanish Rice recipe here.
Tuesday – Prawn Salad
I’ll be making prawn salad for me and the husband – the kids prefer fish finger sandwiches so that’s what they’ll be having – I like an easy life! Get the Prawn Salad recipe here.
Wednesday – Steak Sandwiches
I’ll be making toasted ciabatta rubbed with a garlic clove and topped with fried steak and onions – maybe a little rocket for added green! …. kids are having burgers as they HATE steak.
Thursday – Turkey Keema
A super simple and healthy slow cooker recipe – we love this curry. I serve with boiled rice, popadoms and a spicy side salad. Get the Turkey Keema recipe here. This is a curry the kids just LOVE.
Friday – Fish & Chips
I’ll either do a homemade version or pick it up from the fish and chip shop…. we’ll see how the week works out.
Saturday – Pizza Night
We’ll be firing up the Uuni pizza oven and creating some tasty pizza – I usually just prepare a whole host of toppings and let the kids make up their own. Goat cheese, fig, chilli jam and rocket is my favourite!
Sunday – Greek Lamb Stew
This Greek Lamb stew is just awesome! So tasty, so easy to make and the kids always clear it! I’ll be serving with herby lemon couscous – maybe some green veggies. Get the Greek Lamb recipe here.
