A delicious and easy meal plan this week, filled to bursting with fab family recipes that are quick and easy to cook. All with a summery vibe to match the warm weather.
Monday – green thai chicken curry
Quick and easy Thai green curry made with chicken breast, baby corn and sprouting broccoli served alongside steamed rice and a big zingy lime dressed salad.
Tuesday – frittata
Vegetable frittata packed with peppers, courgettes and onions, served alongside patatas bravas and tomato salad.
Wednesday – meatball subs
Cheat recipe – split open soft sub rolls, pack then with Swedish style meatballs, loads of salad and a drizzle of dill infused mayonnaise.
Thursday – spaghetti with pesto, rocket and feta
This is super quick to make, toss jarred pesto through freshly cooked spaghetti with a handful of rocket and sprinkle with crumbled feta cheese.
Friday – spicy lamb pittas
Toasted pitta topped with fresh salad, spicy lamb mince a crumbling of tangy feta cheese and some shredded red onions. Ready to eat in just 20 minutes.
Saturday – chicken fillet burgers
Chicken breast fillet burgers on brioche rolls with loads of salad, pineapple rings and maybe a slice or two of halloumi. Served with sweet potato wedges and dip.
Sunday – roast dinner
We’ll go for chicken roast dinner this week with a little help from Aunt Bessie…. just to save time.
