This weekly family meal plan is filled with delicious, family friendly dinner recipes that you’ll love as much as the kids do.
The food definitely has a spring feel to it, which I’m loving.
Quick tray bake – slice up either new potatoes or sweet potatoes (or both) into wedges and drizzle with olive oil, bake in the oven for around 10 minutes, then crack eggs into the pan and scatter over some baby plum tomatoes, Return to the oven until the eggs are cooked and the tomatoes squishy and browning.
Ham and cheese sliders – split soft dinner rolls, scatter with ham and cheese, pop the lids on, brush with melted butter and mustard then bake in the oven until the cheese is melted and the sandwich rolls golden.
Add a big bowl of salad or corn and baked beans on the side.
Simple buttery herby omelettes served with crusty french bread and green salad.
Shrimp tostadas – corn tortillas topped with garlicky shrimp, avocado, crunchy red cabbage and roast tomato salsa.
