Weekly family meal plan that’s just bursting with easy, delicious family recipes. Nothing too time consuming, I’ll use a few cheats and these are all meals the kids will definitely eat.
Monday – bubble and squeak
A quick recipe that will use up the leftover potatoes and veggies from the Sunday dinner (t’s work making extra just so you can have this) topped with poached or fried eggs and a sprinkling of fresh chilli. Get the bubble and squeak recipe here.
Tuesday – lancashire potato hash
A traditional Lancashire potato hash that’s perfect for a cold autumn day. I make this ahead and just warm up when we’re ready to eat. You can do this in the slow cooker too if you prefer. All I add when I serve up is pickled red cabbage and beetroot. Grab the potato hash recipe here, it’s cheap, filling and easy.
Wednesday – herby chicken casserole
I’ll probably make this in the slow cooker, chicken breast, rainbow carrots, onions, baby potatoes in a rich herby tomato sauce, lots of fresh rosemary and thyme and just serve with some crusty bread for dipping in. Thursday – all day breakfast
We’re talking grilled sausages and bacon, a mound of scrambled eggs, baked beans, fried tomatoes and a mountain of buttery toast.
Friday – salmon and potato gratin
Simple fried salmon with butter and lemon alongside a creamy potato gratin and some zingy, garlicky, lemony greens. (the kids will eat this with peas and corn not garlicky greens)
Saturday – french bread pizza
TV dinner that’s really easy, slice french baguettes, scatter with your favourite toppings and bake in the oven. Easy and quick, one the kids like to help out making. Get the french bread pizza recipe here.
Sunday – roast chicken dinner
Wouldn’t be a Sunday without it – crispy herby roast chicken, roast potatoes, lots of veggies and probably a Yorkshire pudding or two.
