With summer finally putting in an appearance, this week is all about the sunshine food!
Monday – BBQ lamb kebabs and veggies
A cheat dinner, I’m lighting up the BBQ and throwing on some lovely minted lamb kebabs from Aldi and a pile of vegetables – whole mini peppers, sliced sweet potatoes and asparagus. Served with salad. Easy and laid back.
Tuesday – Spicy chicken pizza and salad
Another cheat dinner, we’ve fallen a bit in love with the Aldi Specially Selected spicy chicken arrabbiata pizzas. So all I have to do is make a big bowl of salad.
Wednesday – chicken and halloumi salad
One of our favourite salad recipes, this is a big flavoursome salad, succulent chicken and grilled halloumi with loads of salad leaves, olives and garlicky bruschetta croutons. You can get the recipe here.
Thursday – chargrilled veggie and bean wraps
Firing up the BBQ again and grilling lots of fresh vegetables, peppers, aubergine, fennel slices and mushrooms, then tucking them up in a wrap with homemade bean hummus.
Friday – prawn orzo pasta salad
A fast and easy pasta salad, orzo cooks really quickly, then I’ll toss it with prawns, lots of herbs and chopped veggies – recipe up this week.
Saturday – chicken dippers and sweet potato wedges
Kids favourite dinner. The chicken dippers are really easy to make and they’re oven baked to be extra healthy. Alongside a portion of sweet potato wedges and maybe bbq beans. Get the chicken dipper recipe here.
Sunday – salmon and salad
