Thursday – Lamb & Broccoli Stir Fry
This is one of my favourite recipes from Nigel Slater, it’s super spicy, flavoursome lamb mince with broccoli – totally delicious, grab the lamb & broccoli recipe here. I won’t pretend the kids will eat this… they won’t entertain it, so they’ll get a little freezer favourite of fish fingers and chips.
Friday – Chicken with Greek Salad
I’ll be making a huge Greek salad and serving with grilled chicken and sweet potato wedges – grab the Greek salad recipe here.
Saturday – Seafood Pasta
I’ll be cooking up a panful of lovely seafood pasta, fresh tomatoes, prawns, fresh chilli, loads of herbs, just delicious.
Sunday – Roast Chicken
I’ll be lightening up the roast dinner and doing herby roast chicken, loads of roast med veg and a salad – throwing over some tahini yogurt dressing.
