Friday – Veggie Quesadillas
I’m thinking – roast some sweet potato, mix in some refried beans, cheese, chargrilled peppers – stuff into quesadillas and cook. I’ll serve with homemade guacamole and roast tomato salsa on the side.
Saturday – Fish Pie
I just love fish pie and this recipe from BBC Good Food is just delicious! Perfect Saturday night dinner.
Sunday – Roast Dinner
I’ll be cooking roast chicken dinner with all the trimmings…. and probably a huge pudding and custard too.
