Monday – Beef and baked bean chilli
This is great for busy weeknights and can be on the table in just 20 minutes – serve with rice and nachos or load into baked potatoes. Get the beef and baked bean recipe here.
Tuesday – Sweet Chilli Chicken Wraps
The kids just love these and they’re quick and easy to make too – I do them with cheat-y Chinese style salt and pepper chips – great for busy weeknights. Get the sweet chilli chicken recipe here.
Wednesday – Fish Finger Sandwiches
Another super quick dinner – weeknights are always just so busy and fish finger sandwiches just so yum! Slide fish fingers onto a wholegrain roll with lots of salad – serve with sweet potato wedges and a pot of pesto pea dip. Get the fish finger sandwich recipe here.
Thursday – Slow Cooker Bolognese
Tasty slow cooker bolognese – simple ingredient list and so easy to make – just toss through fresh spaghetti and serve with peas and corn. Get the slow cooker bolognese recipe here.
Friday – Oven Baked Fajitas
Oven baked is totally my favourite way to do fajitas – just toss the chicken strips, peppers and onions in fajita seasoning, a squirt of tomato puree, juice of half a lime and a splash of olive oil – tip into a roasting tin and oven bake for around 20 – 30 minutes until the chicken is cooked through and the veggies roasted. Serve with shop bought guacamole, salsa and tortilla wraps.
Saturday – Jambalaya
I cook up the Southern Style Jambalaya recipe from the Hairy Bikers it’s so easy and so tasty!
Sunday – Roast Chicken Dinner
I’ll be doing roast chicken dinner with all the trimmings and probably a huge toffee apple crumble with custard too.
