Homemade burgers and fries – I make the burgers and prepare the toppings and sweet potato wedges in the morning so all that’s left to do is cook them at dinner time. Quick and really easy. I really love this simple burger recipe and there’s lots of suggestions for flavouring it up different ways.
I’ll be cooking up a roast chicken dinner, for midweek roast dinner I tend to do a pot roast chicken with all the vegetables cooked in the same pot for less mess and fuss.
Quick and easy French bread pizzas, using up any leftover chicken. We just the love the BBQ chicken french bread pizza recipe. These are quick and ready to eat in just 10 minutes. Serve with a salad or maybe beans and sweetcorn.

Well it’s Easter Sunday so it has to be roast lamb dinner – slow roasted lamb with lots of garlic and rosemary, crispy roast potatoes, lots of green vegetables and probably a lovely rhubarb crumble.
