Tuna, Avocado Pasta Salad – delicious and quick to make, this is great for packing in lunch boxes too.
Ham Salad – a quick and easy salad totally loaded with fresh veggies, this is one of our favourites – I usually serve with a crusty cob or some breadsticks and hummus dip on the side.
BLT– we just love this BLT recipe, a layer of creamy avocado topped with crispy bacon, fresh lettuce and tomato and tangy mayonnaise.
Pasta Pesto – a quick homemade pesto tossed with freshly cooked pasta and Mediterranean style veggies.
Summer Chicken Couscous – a really simple cheat recipe that’s great for summery days when you want something really delicious to eat but don’t want to waste loads of time cooking it.
Lamb Kebabs with Greek Salad – another cheat recipe, take advantage of the BBQ ranges in the supermarket at the minute and cheat your way to lovely lamb kebab and salad pittas for dinner.
Cheesy Buffalo Chicken Subs – the kids love this one, it’s great for a weekend night, easy and delicious.
