I cheated with the chicken and bought a peri peri chicken ready to roast – I’ll be making Parmesan and garlic sweet potato wedges, corn cobs and salad to go alongside.
Tuesday – Meatballs & Mash
Homemade meatballs stuffed with cheese, served with spicy BBQ sauce and a pile of creamy mashed potatoes.
Wednesday – Veggie Burgers
Homemade veggie burgers with salad, cheese and avocado on homemade burger rolls with potato wedges and spicy mayo.
Thursday – Green Chilli Tacos
I’m cooking up Jamie Olivers green chilli tacos and serving with salad and flatbreads.
Friday – Spicy Prawn Stir Fry
Quick Szechuan prawn stir fry with coconut rice and green veggies.
Saturday – Chilli and Cornbread
Homemade chilli with cornbread and salad – easy and YUM!
Sunday – Greek Lamb Stew
