The family meal plan for this week is bursting with easy, delicious family food. As usual there’s a few cheats just to save time and energy. Everything on the meal plan is totally doable and recipes I know the kids love.
Monday – chicken fried rice
Quick and easy recipe using leftover roast chicken from the Sunday roast – just fry up a chopped onion, add in the shredded chicken (some bacon or ham if you’ve not much chicken). Add the rice, I use the quick microwave sachets, add a handful of peas. Stir fry over a high heat, crack in a couple of eggs and cook them, stirring them through the rice. Season with soy sauce and serve. Remember you need to be really careful reheating chicken, make sure it is piping hot throughout.
Tuesday – sausages and spicy potato cakes
I’m making the potato cakes at home – it’s just mashed potato mixed with fried garlic, onion, chopped chilli, parsley and cabbage, formed into little patties and baked in the oven until crisp and browning. Served with spicy sausages and watercress salad.
Wednesday – lamb pitta
Toasted pitta topped with spicy lamb, feta and salad. This is quick, easy and totally delicious. Grab the recipe for spicy lamb pittas here now.
Thursday – burgers and wedges
A cheat dinner – burgers from the butchers, topped with cheddar cheese, red onion and ketchup. Wedges from McCain as they’re our favourite.
Friday – easy spanish rice

Saturday – piri peri chicken and spicy rice
A little cheat recipe here – I’ll just toss chicken pieces in Nando’s piri piri seasoning and serve with spicy microwave rice, sweetcorn and slaw.
Sunday – slow cooker brisket
