Weekly Meal Plan
Monday – Easy Minced Beef Pie
Slow cooker mince beef and vegetables topped with puff pastry and finished in the oven – I’ll serve with mashed potatoes and green veggies. Grab the minced beef pie recipe here.
Tuesday – Meatballs and Pasta
I’ll be making really easy lamb meatballs and serving with a simple tomato sauce and spaghetti – Grab the meatball recipe here. No time to make meatballs? Just buy them ready made.
Wednesday – Crockpot Chicken Casserole
A really easy slow cooker chicken casserole – I’ll serve spooned into bowls with cheat-y Aunt Bessie dumplings and tiger bread to mop up the juices. Get the slow cooker chicken casserole recipe here.
Thursday – Easy Mexican Chicken and Rice
A quick Mexican one pot – spicy chicken breast strips cooked with tomatoes, sweetcorn, peppers and rice. I’ll make a side of cheesy nachos to go alongside.
Friday – Easy Homemade Turkey Burgers
I’ll be cooking up easy turkey burgers and loading them onto brioche rolls with halloumi, pineapple rings and spicy relish. Get the turkey burger recipe here.
Saturday – Take Out
I’m thinking lazy Saturday evening with a little help from the Just Eat app.
Sunday – Chicken Roast Dinner
I’ll be making roast chicken, roast potatoes, Yorkshire puddings and lots of vegetables.
