This week the meal plan is crammed with comfort food, the weather is cold and windy, the clocks have gone back so with dark nights, family comfort food is a must.
Slow cooker lamb wrapped in freshly made warm flatbreads with red pepper & onion hummus. Totally delicious and easy to make.
I’ll be keeping some lamb aside and using it to make a lovely lamb pilaf, with onions and garlic and gently spiced with cumin. Scattered with toasted almonds, just yum.
I’m going with “VEG WED” because meat free Monday never works for me I usually have leftover roast meat to use, so “Veg Wed” it is. I’ll cooking up veggie burgers packed with veggies and served in toasted buns topped with cheese and homemade beetroot relish.
A slow cooker chipotle beef stew, filled with peppers, onions and sweet potatoes. I’ll serve this with plain boiled rice and some steamed greens. Recipe for this will be up in the week.
I’m making crispy fried fish fillets served with homemade mushy peas and yummy tartar sauce. This recipe is inspired by Jamie Oliver.
Well it’s Halloween so I’m making Halloween dinner, probably start with eyeball bruschetta, maybe followed with homemade baked beans in oven baked jacket potatoes and a huge chocolate-y cake.
Roast chicken dinner with all the trimmings, chipolatas and lot’s of seasonal vegetables.
