A weekly family meal plan filled with delicious, easy to make family dinner recipes – this week I’m feeling like loading up on the healthy Mediterranean style food before the FESTIVE SPLURGE!
Monday – Soup & Sandwiches
I’ll be making spinach soup and serving with bruschetta topped with mozzarella, sun dried tomatoes and chillies.
Tuesday – Pasta & Pesto
I’ll be mixing up some fresh Basil pesto and tossing through freshly cooked spaghetti – I’ll probably add a side of steamed green beans and broccoli. Making your own pesto is so easy and tastes so much better than jarred. Get our pesto recipe here.
Wednesday – Gnocchi with Tomato Sauce
I’ll be cheating with this one and using packet gnocchi for speed and serving with a jar of spicy tomato sauce – I’ll add some roast veggies alongside.
Thursday – Spicy Chicken with Loaded Skins
I’ll be making our quick kickin chicken strips and serving with loaded skins, I’ll probably add a side of corn cobs and BBQ baked beans. Grab our chicken strip recipe here and our totally delicious loaded skins recipe here.
Friday – Rustic Chicken Casserole
I’ll be using the slow cooker for this rustic chicken casserole and serving in bowls with crusty bread to mop up the juices. Get the rustic chicken casserole recipe here.
Saturday – Tapas
I love tapas on Saturday night – just a little collection of nice bits, great bread and a glass or two of wine. Perfect.
Sunday – Greek Lamb Stew
Our Greek lamb stew is just gorgeous for Sunday dinner – it’s bursting with flavours, loads of herbs and a sprinkling of salty, tangy feta cheese just notches it up a level. Totally delicious! Get the Greek lamb stew recipe here.
