This week’s family meal plan is packed with really easy to make dinners which I know the kids will clear. Now they’re back at school and autumn has kicked in, the slow cooker is doing most of the hard work.
Monday – chicken casserole
A slow cooker chicken casserole filled with autumn vegetables, peppers, sweet potatoes, squash, a little cinnamon and spice, served with fluffy rice and greens.
Tuesday – sausage, mash and beans
I usually cook the sausages in the slow cooker in onion gravy, just so that all that’s left for me to do is make a pan of mashed potatoes and open up some baked beans. Proper comfort food that’s perfect for busy school nights.
Wednesday – chicken roast dinner
A quick and easy chicken roast dinner made using chicken thighs, with cheat roast potatoes, yorkshire puddings and stuffing balls from Aunt Bessie and a little help from Ahhhh Bisto. Quick, easy and yum.
Thursday – savoury mince and mash
Kids just love this recipe and it’s really easy. I tend to use the slow cooker to make it, just so it’s easier and less time consuming at dinner time. I’ll be using cheat dumplings from Aunt Bessie and serving up a pile of creamy mashed potatoes.
Friday – fish finger sandwiches
Easy dinner for a Friday! Wholegrain rolls stuffed with salad, fish fingers and tartar sauce. Served with sweet potato wedges and mushy pea dip.
Saturday – prawn fried rice
Another cheat dinner… I’ll be frying up prawns, spring onions, peppers, peas and beansprouts, then throwing in a couple of microwave packs of egg fried rice. Serve alongside some prawn crackers and thai sweet chilli dip.
Sunday – pendle witch pie
Stay with me on this one… I visited Pendle Hill over the weekend and it was starting to be all autumnal… and I thought how fab would it be to make a Pendle Witch Pie. So this pie will channel lancashire hotpot but with a twist of mead, juniper and fresh herbs. Recipe will be up soon!
