Monday – slow cooker bolognese

Tuesday – chicken roast dinner
I love a little midweek roast dinner, they’re really economical to make, especially when you’re feeding a family and it packs in lots of seasonal vegetables.
Wednesday – sausage casserole

Thursday – vegetable lasagne
A really simple lasagne, I’ll make a vegetable packed tomato sauce and add layers of squash amongst the lasagne sheets. I cheat with the béchamel sauce though…
Friday – fish pie
Mmmm gorgeous chunks of salmon and big fat prawns in cheesy sauce, topped with mashed potatoes and a sprinkling of grated cheese.
Saturday – Lancashire potato hash
Traditional Lancashire recipe of mince, sliced potatoes, carrots and onions in gravy. Serve with pickled red cabbage and beetroot and lots of buttered bread.
Sunday – roast lamb dinner
I’m thinking slowly roasted really garlicky leg of lamb with rosemary roast potatoes and a pile of greens. Grab the roast lamb recipe here.
