weekly family meal plan - Monday - spinach and ricotta tortellini, Tuesday - potato and cheese tart, Wednesday - BLT pasta salad, Thursday - pulled chicken subs, Friday - pizza night, Saturday - pasties and salad, Sunday - roast chicken and salads

A weekly family meal plan filled with easy to make family dinner recipes.

Monday – spinach and ricotta tortellini

Cheat dinner – shop bought tortellini tossed in garlic and herb butter and served with a big green salad. 

Tuesday – potato and cheese tart

Simple tart recipe with new potatoes, onions and Lancashire cheese – get the potato and cheese tart recipe here. I’ll do salads to go alongside this. 

Wednesday – BLT pasta salad

Super easy BLT pasta salad – crispy smoked bacon, fresh shredded lettuce and halved baby tomatoes tossed together with penne and a creamy ranch dressing. 

Thursday – pulled chicken subs

BBQ chicken done in the slow cooker – shredded and served on soft sub rolls and cheese and lots of salad.

Friday – pizza night

We’ll be firing up the UUNI pizza oven and making wood fired pizza topped with garlic chicken, mozzarella, homemade pesto, rocket and herbs. 

Saturday – pasties and salad

Easy homemade vegetarian pasties served with green salad, tomato salad and maybe some homemade slaw.

Sunday – roast chicken and salad

I’ll be cooking up a garlic and herb roast chicken and serving with lots of different salads.
