Well… firstly I just can’t believe it’s October already! So I’m really turning up the comfort food vibe this week, that’s what autumn is for right?
Monday – fish and chips
I’ll definitely be letting the local chip shop take care of this one, and yes, of course I’ll be eating mine with a wooden fork. Fish and chips taste way better off a wooden fork.
Tuesday – tomato and prawn pasta
Delicious fresh tagliatelle tossed in a rich tomato sauce with prawns, peas and freshly chopped herbs. Easy, quick and totally yummy. Recipe on the blog this week.
Wednesday – peri peri chicken casserole
I’m thinking the slow cooker can do the work here, I’ll load it up with chicken breast, onions, carrots, butternut squash and tomatoes – lots of peri peri seasoning and serve it spooned over cheesy mashed potatoes. Recipe for this one will be on the blog this week.
Thursday – sausage and vegetable rice
A really easy recipe, loaded with flavour and uses just one tray… and we love anything that cuts back on the washing up. Get the sausage and veggie rice recipe here.
Friday – pulled ham and slaw
Another slow cooker recipe, the ham comes out tasting amazing, I make a homemade slaw to go with this and serve in either brioche rolls or tiger rolls, usually with a side of wedges. Grab the pulled ham recipe here.
Saturday – cheesy ham pasta
I’ll use left over ham and mix up some lovely cheesy sauce, throw in some freshly cooked pasta, a few handfuls of cooked peas, maybe some garlicky mushrooms, and serve with toasted breadcrumbs and chilli flakes scattered over the top.
Sunday – roast dinner
I’m thinking roast lamb, roast potatoes, carrots and swede mash and some green veggies, drizzled with a whole load of lovely homemade gravy.
