A weekly family meal plan filled with easy to make family dinner recipes – this week we’re doing fast recipes most nights – it’s a busy week and I need dinner cooked quickly.
Monday – Quesadillas & Sweet Potato Wedges
We love quesadillas for dinner – so quick and easy and you can just add whatever fillings each person likes. I make these with a side of sweet potato wedges and some salsa dip.
Tuesday – Stir Fry Chicken & Noodles
Quick and easy chicken and vegetable stir fry served with noodles tossed in sesame oil and sprinkled with seeds.
Wednesday – Broccoli Pasta Pesto
I’ll whizz up a quick homemade pesto and serve tossed through freshly cooked pasta shells with broccoli – toss over some extra Parmesan cheese and add a side of beans or salad. Grab our pesto recipe here.
Thursday – Dirty Cajun Rice
Another easy dinner – I make this using turkey mince to make it a healthier version – just fried with veggies and seasoning, then add the cooked rice and mix it all together. Really easy dinner.
Friday – Pizza Puff Tarts
Another super easy recipe – use shop bought puff pastry and cover with pizza toppings – serve with homemade apple coleslaw. Get the pizza puff tart recipe here.
Saturday – Festive Nibbles
I’m thinking just a selection of festive nibbles would be good – picky bit tea is always a winner!
Sunday – Roast Chicken Dinner
I’ll be doing roast chicken dinner with all the trimmings and probably a big sticky toffee pudding with custard too!
