First week in September means BACK TO SCHOOL so dinners need to be quick, easy and nutritious to fit in with busy days and super hungry kids coming home from school! I tend to cook a lot of pasta during the week just because it’s so fast and needs little effort.
Monday – Tuna Pasta
I’ll be making puttanesca pasta sauce using fresh tomatoes, tuna with lots of lemon, herbs, capers and olives – tossed through fresh pasta and ready in literally minutes.
Tuesday – Soup and Sandwiches
I’ll simmer up a minestrone soup and serve with toasted cheese sandwiches for dipping in – this is a great meal for when the family are all eating at different times as it’s easy to reheat.
Wednesday – Pasta Bolognese
I’ll be throwing this into the slow cooker in the morning so it’s ready for dinner when the kids get home. Grab the slow cooker bolognese recipe here.
Thursday – Pesto Pasta with Veggies
I’ll make fresh pesto just because it tastes so good! And stir it through warm pasta with green beans and roast courgettes and peppers.
Friday – Fish Tray Bake
Oven cooked potatoes and tomatoes – lots of garlic and olive oil with fish fillets cooked on top. So easy and so tasty. Grab the fish tray bake recipe here.
Saturday – Chicken Kebabs
I’ll marinate chicken in a garlic and herb yogurt sauce and then cook in the Ooni pizza oven – served with freshly made flatbreads and loads of autumn salad with roast peppers and grilled veggies.
Sunday – Slow Cooker Brisket
