Monday – chicken & bacon salad
Delicious bacon wrapped roast chicken served with a big green salad and sweet potato wedges.
Tuesday – seafood pizza
Homemade pizza topped with rich tomato sauce, prawns, tuna and finely sliced fennel. Really easy and really delicious. Leftovers are fab next day.
Wednesday – Mediterranean style tart
A really easy tart made using shop bought puff pastry, served alongside a green salad and corn cobs. Get the tart recipe here.
Thursday – jerk chicken and rice
Jerk spiced chicken legs with a quick vegetable and rice salad and a yogurt dip. Quick, easy and really tasty.
Friday – fish and chips
Saturday – BBQ
I’m thinking chicken kebabs, prawn skewers and a whole load of BBQ sides.
