A weekly family meal plan filled with easy to make family dinner recipes that are perfect for autumn and the whole back to school vibe.
Monday – Lamb pilaf
I’ll be making a quick lamb pilaf using leftover lamb from Sunday dinner – tossing lamb, onions and garlic into a pan, adding rice and some lovely herbs and spices. Quick, easy and delicious.
Tuesday – Chicken and squash traybake
Easy traybake using chicken thighs, sausages, onions and squash, scattered with herbs and spices and roasted in the oven – I’ll serve with mashed potatoes and greens.
Wednesday – Tomato and aubergine stew
It’s a split night tonight so the grown ups are having the tomato and aubergine stew, flavoured with coriander, cumin and chilli. Kids hate this one so they’ll have fish fingers, mashed potatoes and beans.
Thursday – Slow cooker chicken curry
One of our favourite recipes and it always guarantees empty plates – easy to make and packed with extra veggies and the slow cooker means very little effort for me. Win – win. Get the slow cooker chicken recipe here.
Friday – Easy Spanish rice

Saturday – Autumn cheese board
I want an easy dinner tonight as it’s a busy day – autumn cheeseboard is perfect, very little effort, just opening a few packets – put together an autumn cheeseboard easily just gather together some nice cheeses, cured meats, autumn fruit, nice bread and crackers. Get my cheeseboard recipe here.
Sunday – roast dinner
Roast chicken dinner this week with all the trimmings (including the Yorkshire puddings… they go with everything, right?)
