Weekly Family Meal Plan
Mon – homemade fish fingers
A quick and easy recipe, slice the fish into strips, dip in egg and dip in panko bread crumbs. Bake in the oven for around 15 minutes. I’m making a tray of chunky wedges to go alongside and minty mushy pea dip.
Tues – lamb keema
A really quick curry recipes, I make it using a mild curry paste so that it’s suitable for all the kids. And pack in extra veggies by adding frozen peas and spinach. Get the lamb keema recipe here.
Wed – roast chicken dinner
The kids just love a mid-week roast and they’re really cheap to make, I will be cheating a little with a roast in the bag chicken and getting Aunt Bessie to help out with roast potatoes, Yorkshire puddings and carrot & swede mash…. well it’s midweek and there’s no time to do things properly…
Thurs – pizza
Quick and easy French bread pizzas tonight, because they’re ready fast! I’ll add a side of sweetcorn and BBQ beans to squeeze in some extra veggies. Get the French bread pizza recipe here.
Fri – Spanish rice
We love this recipe, it’s packed with flavour but is really quick to cook. A fab cheat recipe. Packed with delicious smoky flavours, it’s delicious. Grab the Easy Spanish Rice recipe here.
Sat – slow cooker chicken curry
We love this curry, it’s easy to make, tastes delicious and with a few extras like popadoms and pickle tray you can turn it into ‘fake away’. Get the slow cooker chicken curry recipe here.
Sun – homemade pie
I’ll be cooking up a nice big steak & Guinness pie, I use the slow cooker to do the pie filling, then top it with shop-bought pastry and finish in the oven. Just add some mashed potatoes and seasonal vegetables. Get the pie recipe here.
