This week’s meal plan is filled with delicious family dinners. All the recipes are super easy, there’s cheats and a little leftover love. And you’ll love them as much as the kids will.
It’s quick and easy tonight, we’re going for toasted ham and cheese sandwiches and serving them up with homemade autumn apple coleslaw which is filled with fresh cabbage, carrots and apples so adds to your 5-a-day.
It’s always busy here on a Tuesday so coming home to a slow cooker bolognese is such a time saver and means we eat a really nice homemade meal. The bolognese has hidden veggies in the sauce so is extra good for you. I serve with peas and corn because that’s what kids love!
Tonight’s oven baked fish with herby topping – is a really simple recipe, we use frozen fish fillets for this recipe because it’s so much easier and cheaper. Baked in the oven, topped with herby breadcrumb topping and served with homemade potato wedges and minty peas.
Serve up a delicious pesto chicken bake, this recipe is always a big hit with the kids, simply pop chicken breasts into a roasting tin, top with pesto, sliced tomatoes and mozzarella cheese. Bake in the oven for around 30-40 minutes until cooked through. Serve with chips and lots of veggies.
We’re cooking up a pan of veggie chilli, using the River Cottage Veg Everyday pinto bean chilli recipe, making a few changes to include more seasonal vegetables like butternut squash and sweet potatoes. And served with a side of cheesy nachos.

We’ve gone down the lazy Sunday dinner route again this Sunday with a slow cooker brisket recipe. This really is the nicest way to cook brisket, the meat is just melt in the mouth. Served with Yorkshire puddings, roast potatoes and seasonal vegetables. Deliciously easy.
