I’ve been bursting to kick off autumn food, it’s my favourite season for cooking, so the meal plan this week is packed with delicious seasonal autumnal dinner recipes. As usual they’re all easy to prepare, easy to cook and totally yum.
Monday – maple chicken
Quick and easy pan fried chicken, cooked in butter with onions, maple syrup and lots of herbs. I’m making mashed sweet potato to go alongside this and corn cobs.
Tuesday – slow cooker pork and cider casserole
Lean pork cooked in Cornish cider with celery, baby carrots and onions. I’ll serve this with mashed potatoes.
Wednesday – roast tomato and pepper soup
Homemade roast tomato and pepper soup with cheese and onion topped toast to dip in. Easy and totally delicious.
Thursday – autumn cobb salad
I’m doing an autumn twist on a traditional cobb salad, so I’m thinking maple bacon and sticky smoky chicken alongside roast squash, cranberry speckled cheese, pecans, crunchy apples and salad greens.
Friday – loaded baked potatoes
These will be oven baked with lovely crisp skins and fluffy insides. I’ll load them up with cheese, beans and caramelised onions. We’ve loads of baked potato topping ideas that are perfect for autumn and winter.
Saturday – autumn cheese board
I love this for Saturday dinner, it’s really easy and laid back. Just serve up nice bread alongside a couple of different cheeses, some autumn fruit and add chutney and pickles.
