The weekly family meal plan is packed out with comfort food that I know the kids will just love. All the recipes are easy, usually use a few cheats to keep them time friendly, which makes them ideal for busy family life.
Monday – meatballs and pasta
I’ll be making a quick tomato pasta sauce and serving with shop bought meatballs and lots of spaghetti, maybe even a few slices of garlic bread for mopping up the sauce.
Tuesday – chicken fajitas
Quick and easy homemade chicken fajitas with lots of extra toppings to pack in some more veggies. Get the Fajita Night recipe here.
Wednesday – soup and sandwiches
I’ll be cooking up a pan of roast pepper and tomato soup (it’s just so delicious!) and serving alongside crusty bread rolls filled with ham and cheese. Get the roast pepper and tomato soup recipe here.
Thursday – chicken curry and chunky chips
Proper comfort food! Nothing better than dipping big chunky chips into curry sauce, just delicious! I’ll be cheating with this recipe as Thursday is a busy day for me, I’ll be pimping the Patak’s and adding extra peppers, onions and chopped spinach into the sauce to up the veggie content.
Friday – breakfast for dinner
Something extra nice about breakfast for dinner, think smoked bacon, scrambled eggs, grilled tomatoes, hash browns, baked beans and buttery mushrooms. Yum!
Saturday – veggie chilli in baked potatoes
I’m making the pinto bean chilli from River Cottage and stuffing it into oven baked potatoes.
Sunday – toad in the hole
I really fancy toad in the hole instead of Sunday roast this week – I’ll make a huge Yorkshire pudding, throw in loads of nice sausages and serve it with mashed potatoes and onion gravy.
