This week Daisies & Pie is taking part in a ‘no food waste’ challenge and throwing ourselves into the #expressyourshelf campaign over at Hubbub in conjunction with Tesco and Love Food Hate Waste.
Basically I have to use up the leftovers and waste no food, which is something I already think we’re quite good at here, so I’m not expecting too much of a challenge. I’ve planned a Mediterranean style menu as I know with this type of food seems easier to incorporate leftovers into the next meal.
So, this week we’re eating…
A quick Spanish rice one pot which is great for a weeknight as it cooks fast and tastes yum! Packed with peppers, onions and tomatoes and just flavoured up with a little chorizo. I’ll do a warm garlicky chickpea salad alongside just to up the veggies. Any leftovers I will eat cold next day for lunch.
I’ll use shop-bought pastry sheet and layer it up with goats cheese, jarred peppers and olives and serve alongside a warm bean salad, made using frozen green beans. Using jarred and frozen vegetables always cut’s down on waste as they keep for ages in the fridge and freezer for use another day. Again any leftovers will be fine eaten cold for lunch next day.
Lamb meatballs in tomato sauce with spicy potatoes – patatas bravas style and homemade olive bread. I’ll get the recipe for the meatballs up later in the week, they’re so yummy you’ll love them! Any leftovers can be reheated tomorrow lunch – or taken cold in a lunchbox.
A quick and easy warm tuna nicoise salad, using jarred sun dried tomatoes instead of fresh so it’s a store cupboard recipe. I’ll serve this with leftover olive bread from yesterday turned into little bruschetta with garlic and olive oil.
Roast chicken flavoured with lemons, oregano, basil, garlic and thyme, served with roast vegetables and quick and easy cous cous salad. Any leftovers will be great for lunch tomorrow.
A little homemade Spanish style tapas it will probably have garlicky prawns, chicken skewers, mini chorizo in spicy tomato sauce, warm garlicky bean salad, maybe a tortilla, and some nice bread. Leftovers for lunch tomorrow.
Easy chicken and chorizo one pot served with gnocchi and green beans. A totally delicious and warming family dinner. Leftovers will be fine for lunch on Monday.
