The family meal plan this week is filled with easy dinner ideas, a little bit of a Mediterranean vibe and nothing that takes too long to make And all the dinners are totally delicious.
Quick and easy spaghetti alla marinara. I’m keeping this dinner plain and simple and serving alongside steamed greens.
Easy chicken fillet burgers simply grill chicken fillets, slide them into brioche rolls and add whatever toppings you like. Serve alongside sweet potato wedges.

Couscous bowls with harissa chicken. Delicious spicy chicken with couscous and loads of roast veggies. Easy, nutritious and totally yum.
Tapas night – I shall make a selection of little tapas dishes – chorizo in red wine, garlic prawns, little spinach and feta pasties, patatas bravas and maybe some mini meatballs or paella.
I’m lightening up roast dinner this week and doing Italian style roast chicken, with whole baby roast potatoes, roast peppers, courgettes and onions, a rocket and bean salad and a tahini yogurt dressing.
