Mmmm we just can’t get enough of this delicious Firecracker Chicken recipe! Perfect for Friday night ‘fake-away’ and super easy to make too!

This is hands down one of our favourite, easy spicy chicken and rice recipes. This chicken dish is sweet, sticky, spicy and mouthwateringly delicious!

We serve our Firecracker Chicken with quick and easy microwave rice so that the whole chicken dinner is ready in less than 30 minutes! when we’ve a little more time, then we cook up a pan of savoury rice to go with this dish.

It’s also delicious served with our yummy air fryer salt and pepper chips.

And the firecracker sauce is so simple to mix up, this whole dish is really simple to cook!

Equipment Needed To Make Firecracker Chicken

  • Chopping Board
  • Sharp Knife
  • Large Wok Style Pan or Skillet
  • Frying Pan
  • Two Cooking Spoons
  • Small Mixing Bowl
  • Teaspoon
  • Tablespoon
  • Dish To Marinate Chicken

Firecracker Chicken Ingredients

You’ll need a handful of store cupboard ingredients for the sauce, then some fresh chicken and veggies for the stir fry.

For the firecracker chicken stir fry

  • 650g chicken breast – diced
  • 1 tbsp sesame oil
  • 1 onion – diced
  • 1 red pepper – diced
  • 1 yellow pepper – diced
  • 250g baby corn – chopped
  • Handful of coriander – for serving

For the firecracker sauce

  • 250g BBQ sauce – just choose your favourite shop bought BBQ sauce
  • 1 tsp hot chilli sauce – we use a fiery BBQ Plum Naga Chilli Sauce from Trodden Black it is FIERCE! You can vary the spiciness in the sauce to suit yourself by choosing a mild or hot chilli sauce.
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp white rice vinegar

How To Make Firecracker Chicken

You’ll just LOVE how easy our spicy chicken recipe is to make – so simple and perfect for a Friday night dinner!

Step One – make the firecracker sauce

  • Tip the BBQ sauce into a small bowl. Add in the spicy chilli sauce, soy sauce, sesame oil and white rice vinegar. Mix well to combine.
  • Tip the firecracker sauce over the diced chicken breast and mix everything together to coat. You can use the chicken straight away or marinate it in the fridge for up to 24 hours (and use within the use-by date on the chicken packet)

Step Two – fry the firecracker chicken

  • Add half a tablespoon of sesame oil to a skillet pan over a medium heat.
  • Tip the marinated chicken into the pan along with any marinade and fry over a medium heat for around 15-20 minutes (or until cooked through properly with no-pink remaining) – stirring often to avoid it sticking.

Step Three – stir fry the vegetables whilst the chicken is cooking

  • Add the remains half tablespoon of sesame oil to a frying pan, then stir fry the vegetables over a medium heat, stirring often.

Step Four – mix the vegetables into the firecracker chicken sauce

  • Tip the stir fry vegetables into the pan with the cooked firecracker chicken sauce and mix well to combine. Continue to cook for around 5 minutes.

Step Five – serve the firecracker chicken

  • Scatter over the chopped coriander and serve.

A quick and easy spicy chicken and rice dish that's perfect for family dinner.

Ingredients
