Frozen peas are a freezer essential at my house but they’re not just for adding a little green to a plate of fish fingers and chips. Here’s my five favourite things to make with frozen peas.
Pesto pea dip
Cook the peas in the microwave, they take literally minutes. Tip them in the blender, add a heaped spoonful of cream cheese (or fat free yogurt if you prefer), 2 teaspoons of basil pesto and blitz to a lumpy puree. Perfect for dipping oven baked wedges in and serving alongside grilled fish.
Quick pea soup
Cook the peas in boiling water with two peeled and cubed potatoes (cut them small so they cook quick). Gently fry finely diced onion, garlic and chopped smoky bacon in a little olive oil. Tip into a blender, add the cooked and drained peas and potatoes. Then blend as you pour in hot chicken stock until you have a perfect soup consistency. Serve with crusty bread for dipping.
Lovely, creamy, garlicky tagliatelle with ham and peas. This meal is ready in around 10 minutes. It’s such a super quick meal and one that’s great for weeknight cooking – grab the recipe here.
Super quick salad with peas, artichokes, salad leaves and cheese. Great for a quick lunch, just serve with crusty bread. Get the pea salad recipe here.
Delicious pea green smoothie
Throw a large peeled banana, 2 peeled kiwi, a small handful of cooked and cooled peas and a couple of large spoonfuls of natural yogurt into a blender and blitz until smooth. The sweetness of the peas works well with banana and kiwi and it’s especially good for getting vegetables into reluctant veggie eaters.
