The perfect dessert for sharing this Easter! A giant cookie loaded with mini eggs and white chocolate chunks, served still warm from the oven with delicious clotted cream ice-cream melting into it…. just don’t forget to share!

OMG you are just going to LOVE this giant cookie. It’s completely and utterly delicious and the way the clotted cream ice-cream melts into the dreamy, warm mini-egg studded cookie dough is just AMAZING!

The perfect sharing dessert for Easter and one the kids will just adore! Because sometimes only giant cookies will do!

Giant Cookie Ingredients – With Mini Eggs

  • 180g unsalted butter – at room temperature
  • 200g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 250g plain flour
  • 1/2 tsp fine sea salt
  • 1 tsp baking powder
  • 100g white chocolate – chopped into chunks
  • 200g Cadbury Mini Eggs
  • Ice-cream to serve – I use Kelly’s Clotted Cream ice-cream because it’s just sooooooo good!

How to make a giant cookie with mini eggs

  • Preheat the oven – 190C / 375F / Gas Mark 6
  • Mix the butter and sugar – in a large mixing bowl mix the butter and sugar until soft and creamy.
  • Add the egg and vanilla – then stir them into the butter and sugar mixture.
  • Tip in the flour, baking powder and salt – mix everything together to a stiff cookie dough.
  • Add the chocolate and 100g of Cadbury mini eggs – stir the chocolate treats into the cookie dough.
  • Lightly grease a 22cm casserole pan or roasting tin – just wipe the inside of the casserole pan with butter.
  • Tip the cookie dough into the pan – and spread across the whole of the casserole pan, patting down with a spoon to smooth the top.
  • Bake the giant cookie – put the giant cookie into the oven and bake for around 20-22 minutes until the top is turning a pale golden colour and the chocolate is deliciously melty.
  • Add some more Cadbury mini eggs – scatter the remaining 100g of mini eggs across the top of the hot cookie. These will melt into the dough….
  • Leave the giant cookie to cool for 10 minutes then serve topped with scoops of ice-cream.

Make a giant cookie your way

  • Swap the chocolate – try any other chocolate you like – chocolate orange, smarties, peppermint chocolate, chunks of Mars Bar or Bounty. Just switch up the flavours to suit yourself. You could even do a half and half!
  • Serve with different ice-cream – swap the ice-cream flavour for your favourite – just mix and match the ice-cream flavours to suit the chocolate used.

Ingredients
