Super quick Greek chicken salad is a tasty healthy meal ideal for busy weeknights. This is a traditional Greek style salad but with added chicken and it tastes just great!
Take a large bowl and toss in lots of lovely fresh ingredients like salad leaves, onions, baby plum tomatoes, cucumber slices, black olives, feta and chicken. If you’re feeling lazy or simply run out of time this salad is fine made with rotisserie chicken. This is dinner packed with fresh veggies and ready fast!
If you’re cooking your own chicken you’ll just need 3-4 chicken breasts preheat the oven to 200C and place the chicken on a baking tray, drizzle with olive oil and sprinkle with salt, pepper and a scattering of oregano. Cover with foil and cook for around 20-30 minutes until no pink remains. You can cook the chicken up to a day before and keep it in the fridge until ready to use.
Super quick midweek meal
- 1 bag of washed salad leaves
- 250g baby plum tomatoes
- 1/2 cucumber sliced
- 1/2 red onion sliced
- handful of black olives
- 200g feta cheese cut into cubes
- 3-4 cooked chicken breasts (or rotisserie chicken)
- Olive oil
- Add the salad leaves to a large bowl, toss in the cucumber, tomatoes, onions, olives, feta and chicken.
- Drizzle over some fruity olive oil and toss the salad together to mix well.
Greek chicken salad is just delicious served with some nice bread or a dish of pasta and pesto or even a side of french fries.
Anything leftover can be stuffed into pitta breads for lunch the next day.
