A super quick and totally delicious warm lentil salad with halloumi, baby beetroot and salad leaves. Perfect alongside some crusty bread and a glass of wine for a quick work night dinner.

Our warm lentil and halloumi salad is a total work night winner dinner for two.

This warm salad is ready to eat in literally minutes and the only thing it needs is a chunk of crusty bread for mopping up any juices.

Oh okay then… maybe a glass of red wine.

When I make this salad I do cheat and use microwavable sachets of Merchant Gourmet Tomatoey French Puy and Green Lentils they taste delicious and are ready in just under a minute. This simple but substantial salad is a fab quick fix meal.

I must admit this isn’t a meal that appeals to the children in fact they won’t touch it but works well as a quick fuss free meal for me and the husband if we are eating late.

Warm Lentil Salad Ingredients

To make our lentil salad recipe you will need…

  • 80g mixed salad leaves – I usually use one with rocket and baby herb leaves.
  • 150g beetroot – I use baby beetroot in a chilli spike vinegar dressing
  • 200g halloumi – cut into 8 slices
  • 1tbs olive oil

How to make our halloumi and lentil salad

  • Add a couple of handfuls of the salad leaves to the serving plate.

  • Heat a frying pan or griddle pan to a hot heat – drop the halloumi slices on to sear quickly on each side – don’t add oil – just cook them in the dry pan.

  • Whilst the halloumi is cooking microwave Merchant Gourmet Tomatoey French Puy and Green Lentils as per the packet instructions.
  • Sprinkle the Puy lentils over the top of the rocket leaves.

  • Scatter the sliced beetroot over the lentils.

  • Slide the halloumi slices on top the lentils.

  • Drizzle with a little olive oil.

  • Serve with crusty bread.

Make grilled halloumi and Lentil salad your way 

  • Throw in some antipasti mushrooms and a handful of olives.
  • Add some parma ham or grilled prawns.
  • Make chickpea and halloumi salad by scattering in some cooked chickpeas with the lentils.

Lentil Salad Vegan Recipe

You can make our lentil salad vegan – just omit the halloumi and replace with toasted pine nuts, walnuts or even sliced vegan sausages

Ingredients

  • 80g bag of washed and ready rocket or mixed salad leaves.
  • Sachet of Merchant Gourmet Tomatoey French Puy and Green Lentils 
  • 200g halloumi sliced into 8 
  • 1 tbs Olive oil

Instructions

  1. Add a couple of handfuls of rocket to the plate.
  2. Heat a frying pan to high and sear both sides of the halloumi slices.
  3. Microwave the lentil sachet as per the packet instructions.
  4. Sprinkle the Puy lentils on top of the rocket leaves.
  5. Scatter the sliced beetroot over the lentils.
  6. Slide the halloumi slices on top the lentils.
  7. Drizzle with a little olive oil.
