Everyone just LOVES our quick and easy halloumi fajitas. Soft flour tortillas stuffed with delicious seasoned halloumi and vegetables with our favourite fajita toppings. A super easy weeknight vegetarian dinner!

Halloumi fajitas are a total feel good, easy dinner idea.

Skip the meat and chicken and load up those fajitas with THE BEST CHEESE OF ALL! (is there anyone who doesn’t like halloumi???)

Halloumi Fajita Ingredients

Our veggie fajitas are loaded with delicious fresh vegetables and just bursting with flavour!

For the halloumi and veggie fajitas filling

  • 1 tbs olive oil – you can swap this for sunflower oil or rapeseed oil if you prefer
  • 1 red pepper – roughly chopped
  • 1 yellow pepper – roughly chopped
  • 1 green pepper – roughly chopped
  • 1 small red onion – sliced into wedges
  • 400g halloumi – sliced into chunky sticks
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder/granules

To serve

  • 8 small soft flour tortillas
  • 100g bag salad leaves – I use a baby leaf mix with baby spinach and pea shoots
  • 80g sour cream
  • Handful of chopped coriander
  • Sprinkling of candied jalapeños

How To Make Halloumi Fajitas

Our halloumi wrap recipe is super simple to make and we think you’ll just LOVE it!

  • Fry the onion and peppers – first up add 1/2 the olive oil to a wok or skillet pan and gently fry the onion and peppers over a medium heat. Tip in half the fajita seasoning and all the garlic and oregano. Cook for around 7-8 minutes and then remove from the pan to a plate.

  • Fry up the halloumi – add the rest of the olive oil to the pan, then tip in the halloumi strips and the rest of the fajita seasoning. Gently fry the halloumi over a medium-high heat until it’s starting to colour.

  • Mix the vegetables back in with the halloumi – once the halloumi is colouring nicely, tip the vegetables back in the pan with the halloumi and continue to cook for 1-2 minutes.

  • Warm the tortilla wraps – do this as per the packet instructions. Either in the microwave or dry frying pan.

  • Serve the halloumi fajitas – carry the pan of halloumi fajita filling to the table and arrange the fajita toppings, Then let everyone help themselves and make up their own veggie fajitas.

Make Halloumi Fajitas Your Way!

We’ve given you a basic halloumi and veggie fajita recipe but you can mix things up and add your own style!

  • Add in some spice! Add a pinch of chilli flakes or freshly chopped chillies to your fajita filling.
  • Add more vegetables – try adding in some refried beans or spicy beans from a can.
  • Make gluten free halloumi fajitas – use gluten free wraps and be sure the herbs, spices and seasoning is gluten free too.
  • Make halloumi tacos – skip the soft flour wraps and add that yummy filling to taco shells.
  • Add some chicken – my kids love some chicken added in with these fajitas too.

Halloumi Fajitas

Tasty halloumi fajitas that are loaded with fresh veggies!

Ingredients
