Healthy Oven Baked Cajun Chicken Thighs

Healthy oven baked Cajun chicken thighs are super simple to make and really versatile. Serve with rice, chips or creamy mash for an easy midweek dinner.

Our easy chicken thigh recipe is so simple. You can whack this in the oven whilst you’re helping the kids with their homework.

It’s a delicious, versatile chicken dish which you can serve with whatever you fancy. It goes really well with fries, mashed sweet potato or rice and beans.

Just add a few side dishes. Try garlic bread, a big salad or corn cobs for a dinner the whole family will just LOVE!

Baked Cajun Chicken Ingredients

  • 1.2kg chicken thighs (skin on and bone in)
  • 2-3 tsp Cajun seasoning – this is super handy to have in the cupboard at home. It’s great for flavouring chicken, salmon and even potato wedges.
  • Pinch of salt

How to cook chicken thighs in the oven

  • Heat the oven to 200C
  • Slash the skin on the chicken thighs and scatter over the seasoning. If you like things spicier add some more seasoning.
  • Sprinkle with a pinch of salt.
  • Bake in the oven for around 40-45 minutes or until the chicken is cooked through properly and no pink remains. When inserting a knife juices should run clear.

Make Baked Cajun Chicken your way

  • Use drumsticks in place of thighs.
  • Like some heat? Go spicer and add a pinch of chilli flakes to the Cajun seasoning. 
  • Go for an Indian flavour and use curry powder and cumin instead of Cajun seasoning.

Easy chicken thigh recipe

Total Time 45 minutes

Ingredients

  • 1.2kg chicken thighs (skin on and bone in) 
  • 2-3 tsp Cajun seasoning 
  • Pinch of salt

  1. Heat the oven to 200C
