Chicken Fried Rice is one of those super easy Chinese style dishes you can throw together in no-time. Great for weeknight dinner!

Chinese Chicken Fried Rice is brilliant for busy weeknights. Delicious tender Chinese spiced chicken pieces with peas and egg fried rice. Total comfort food, packed with flavor and really simple to make!

Easy Chicken Fried Rice Recipe

Serves – 4 

Prep Time – 5 minutes 

Cook Time – approx 20 minutes

Total Time – around 25 minutes

Equipment Needed

  • Chopping board
  • Sharp knife
  • Wok – or large skillet style pan
  • Cooking spoon
  • Saucepan for the rice
  • Colander
  • Tablespoon
  • Teaspoon
  • Cup
  • Fork

Ingredients For Chicken Fried Rice 

Everything you need to make a tasty chicken fried rice at home – plus see below for add-ins

  • 1 mug of rice – long grain rice or jasmine rice work well
  • 1 tbsp sunflower oil – you can swap this for vegetable oil if you prefe
  • 1 bunch spring onions
  • 1 cup frozen peas
  • 650g boneless skinless chicken breasts, chopped into bite sized pieces
  • 1/2 tsp garlic powder
  • 1 tsp onion granules
  • 2 tsp Chinese five-spice seasoning
  • 2 eggs – beaten
  • 1 tbsp soy sauce

How To Make Chicken Fried Rice – Quick And Easy!

Step Onepeel, chop and prep your ingredients

  • Prepare all the ingredients so that everything is to hand and you’re ready to cook.

Step Two – cook the rice

  • Cook the rice as per the packet instructions, then drain using a colander and stand to one side. Whilst the rice cooks, quickly get on with frying the chicken and vegetables.

Cooks Note! We don’t ever use leftover rice, we always use freshly cooked hot rice in our chicken fried rice dishes. We don’t ever reheat rice for this dish. If you wanted to make the recipe quicker, you can use cooked, hot sachets of microwave rice instead of boiling your own.

Step Three – cook the chicken

  • Add the sunflower oil to a wok and fry the chicken breast pieces until cooked through properly (smaller pieces take less time to cook than larger ones)
  • Season the chicken with the garlic, onion powder and five-spice powder.

Step Four cook the peas and onions

  • Add the peas and spring onions to the pan and continue to fry over a medium-high heat until the peas are cooked through.
  • Then remove the chicken and pea mixture from the pan, onto a side plate.

Step Five – make the egg fried rice

  • Add a splash of sunflower oil to the pan and tip in the beaten eggs, stir them with a wooden spoon, when they just start to scramble tip in your hot cooked rice, and stir fry everything together.

Step Six – add soy sauce

  • Season with the soy sauce.

Step Seven – put the chicken and veggies back in the pan

  • Add the chicken and peas back into the pan and mix everything together, fry for a few minutes and then once everything is properly cooked through serve.

Here are five delicious side dishes that go great with homemade chicken fried rice

Prawn Crackers And Dip – Serve the chicken fried rice with a big bowl of prawn crackers and spicy sweet chilli dip. Prawn crackers are great for scooping up fried rice.

Spring Rolls – grab a pack of spring rolls from the supermarket, and heat them as you cook the chicken fried rice. They make a tasty side dish or starter and are perfect with some hoisin sauce for dipping.

Stir-Fried Vegetables – a colourful medley of stir-fried vegetables, such as broccoli, red and yellow bell peppers, carrot batons, baby corn, and sugar snap peas, adds extra vitamins and counts towards you 5-a-day. Plus they’re packed with taste!

Recipe Tips And Variations 

Make spicy chicken fried rice

Fancy adding a kick of heat? Add in some finely chopped chillies or a pinch of Chinese style curry powder to spice things up!

Add more veggies

Add in any extra vegetables you like to eat, this recipe works well with baby sweetcorn, mushrooms or broccoli florets. You could cut the carbs and use cauliflower rice if you prefer.

Swap the chicken

You could make this recipe using diced chicken thighs, shrimp or strips of pork or beef or a combination!

Ingredients

  • 1 mug of rice
  • 1 tbsp sunflower oil
  • 1 bunch spring onions

  • 1/2 tsp garlic powder
  • 1 tsp onion granules
  • 2 tsp Chinese five-spice seasoning
  • 2 eggs - beaten
