Italian Beef Stew

Sizzling Beef Fajitas
Toss strips of leftover roast beef in honey and smoked paprika and sizzle in a pan until heated through properly – pack into fajitas with fresh salad vegetables, soured cream or grated cheese for a tasty quick family meal.
Quick Beef Fried Rice
Turn your leftover beef into a zingy dish of Chinese food. Stir fry your strips of beef with peas and corn and a tsp of Chinese five spice powder until they’re all heated through properly. Add in freshly cooked hot rice and a couple of beaten eggs and stir fry until the eggs are cooked. Serve with soy sauce and prawn crackers.
Top shop bought or homemade pizza base (or use muffins, pittas or naan) with tomato base sauce, scatter over the shredded leftover beef, add a handful of olives, some strips of jarred chargrilled peppers and some chopped mozzarella.
Fry onions, add strips of leftover beef and handful of frozen peas, pour oven enough beef stock to just cover the pan contents. Bring to the boil and cook for 5 minutes, thicken the gravy using cornflour then put into an ovenproof dish and top with mashed potatoes. bake in the oven on 200C until potatoes are browning.
Beef Noodle Soup
Boil 500ml of beef stock, add 1 tbs soy sauce, 1 tsp five spice powder, nest of rice noodles, leftover shredded beef, a couple of handfuls of shredded greens or frozen peas, heat through and serve.
Beef & Cheese Pasties
