Jammy Eggs That Are Perfect For Breakfast 

Want an easy and delicious brunch recipe? Try my jammy eggs on toast! I'll show you how to make the perfect eggs and give you some ideas for yummy extras to make it even more delicious!

Now, jammy eggs on really buttery toast is one of my all time favourite breakfasts. They're like a lazy version of a poached egg. And the perfect way to kick off my Saturday.

And if you're like me, then you'll just love that 'just-over' soft boiled egg yolk and the way it squishes into the buttery toast. Not too runny, not too hard. Just perfect eggs, every time. 

Making Our Jammy Eggs On Toast For Breakfast Is A Good Thing And Here’s Why! 

They're super easy to make! - Literally half way between a soft boiled egg and a hard boiled egg, these breakfast eggs, are really easy, and faff-free. 

Protein packed - I like to make sure I eat protein at breakfast, and eggs are a great way to get extra protein into my day. 

Versatile - you can use the jammy soft boiled eggs on any toasted bread you like - ciabatta, sourdough, bagels, wholegrain - it doesn't matter, just toast and butter your favourite. There's also lots of extra things you can add to your eggs on toast too!

Jammy Eggs Recipe 

Serves  – 1 (easily doubled, tripled or more)  

Prep Time – 1 minutes

Cook Time - 6 ½ minutes 

Total Time – Approx 10 minutes (allow a couple of minutes for cooling the eggs before peeling)

Equipment Needed 

  • Medium Saucepan 
  • Slotted Spoon 
  • Bowl - filled with cold water and ice cubes (if you have any to hand to make ice water) 
  • Knife 
  • Toaster
  • Butter knife 

Ingredients For Jammy Eggs On Toast

You’ll only need four simple ingredients to make these super simple yet indulgent perfect jammy eggs for breakfast

  • 2 large eggs 
  • 2 slices bread (let's just take a minute to chat about Jason's Sourdough Ciabattin! It makes the PERFECT toast. It's just everything you need from a loaf to make a delicious brunch!)
  • 2 teaspoon butter 
  • pinch sea salt flakes 

How To Cook Perfect Jammy Eggs 

You’ll love how easy this delicious breakfast is to make and we'll give you some great ways for adding in extra ingredients at the end too! Just follow these instructions for perfect jammy eggs. 

Step One - boil the pot of water 

  • Put your saucepan filled with water onto the hob and bring the pan to the boil 

Step Two - lower the eggs into the boiling water 

  • Once the water is boiling, lower the eggs into the water using a slotted spoon.
  • Then immediately set the timer for  6½ minutes  
  • Reduce the heat so that its a medium heat, and the pan bubbles away but not overly vigorously 

Cooks Note -  How long to boil jammy eggs - 6½ minutes is around the time it takes to cook large eggs straight from the refrigerator, if your eggs are smaller or larger then you may need to adjust the cooking times slightly - it's a little trial and error when you first start to make jammy eggs. 

Step Three - prepare the ice water bath 

  • Run some cold water into a bowl and pop in a handful of ice cubes. 

Step Four - cool the cooked eggs 

  • After  6½ minutes remove the eggs from the boiling water using the slotted spoon and pop them straight into the ice bath 
  • Leave them in the ice water for around 2 minutes, so that they stop cooking, and so that they're cool enough to handle whilst you peel off the egg shells 

Step Five - make the toast

  • Whilst the cooked eggs are cooling down, make the toast. 
  • Toast the bread to your liking and then spread with butter and pop onto a side plate. 

Step Six - peel the eggs and top the toast 

  • Take the eggs from the ice water and tap them on the kitchen work top to crack the shell, then peel off. They should have perfectly set whites and a jammy yolk when you cut into them. 
  • Chop the eggs chunkily and put them onto your toast - dig in, it's far too good to be waiting around!

Tasty Tips From Our Kitchen To Make Your Jammy Eggs On Toast Even Better! 

This is such an easy breakfast recipe to make, but there’s room to add your own twist and style, because I get it, sometimes you want to feel all cafe-style, but at home, in your PJs! 

Make eggs Italian style - toast a couple of pieces of focaccia or ciabatta bread, then rub with surface with a freshly peeled clove of garlic. Drizzle over a little olive oil, then top with your jammy eggs and a sprinkling of black pepper, sea salt and fresh herbs - dill works well here. 

Make avocado toast topped with jammy eggs - toast your bread, top with smashed avocado, then slide on the jammy eggs, I like this with a sprinkling of chopped flat leaf parsley, black pepper and sea salt flakes. 

Use your jammy eggs in other meals - use the eggs to top ramen noodle bowls, or in salads, they're great in a tuna nicoise salad.
