Don’t let that Christmas turkey go to waste! Here’s our FAVOURITE leftover turkey recipes to help you make the most of your festive feast!

Christmas Dinner is a total festive treat. Plates piled high with roast turkey, roast potatoes and all the trimmings.

But… there’s no way all that turkey will be eaten and so it’s a good idea to have some great turkey leftover recipes to make the most of your food and save money!

Five Most Popular Ways To Serve Leftover Turkey

Okay.. here at Daisies & Pie our five favourite ways to eat turkey leftovers are super easy and so tasty!

Leftover Turkey Sandwiches

You just can’t go wrong with a turkey sandwich!

Grab your favourite bread – we kinda like a fresh baked baguette (because at Christmas we all have cupboards full of these… right?)

Split open the baguette and add a good thick layer of mayonnaise, then top with shredded lettuce and cucumber.

Next add a layer of leftover turkey, if you’ve any leftover Christmas ham then throw that in too.

Top with cranberry sauce, apple sauce and leftover stuffing. Then squash it all together and eat!

Leftover Turkey Curry

A Boxing Day classic around our house! And our leftover turkey curry is super easy! No faff, just delicious!

Chop a couple of onions and 2-3 cloves of garlic and fry in some sunflower oil with curry powder (or paste) – feel free to use whichever strength you like – hot or mild.

Then add a couple of tins of chopped tomatoes.

Next tip in your shredded turkey meat – you can also add in leftover veggies or even roast potatoes. Then add a teaspoon or two of Garam Masala

Bring the curry to the boil and then reduce the heat and simmer with the lid on for around 30 minutes so all the flavours can cook together nicely. And be sure the meat is heated through properly to a minimum temperature of 75C.

Serve with rice, naan bread and Indian style dips.

Leftover Turkey Noodle Soup

Bring a pan of chicken stock to the boil (just use stock cubes) add a couple of tbsp’s of soy sauce, 1 tbs fish sauce and 2 tsp five spice powder,

Then add a couple of nests of rice noodles, leftover shredded turkey, a couple of handfuls of shredded greens (if you’ve sprouts left over shred and add them), heat through thoroughly and serve.

Leftover Turkey Fried Rice

Use your leftover turkey to make delicious turkey fried rice – grab the beef fried rice recipe here and swap the shredded beef for turkey.

BBQ Turkey Fajitas

Simply toss strips of leftover turkey in your favourite BBQ sauce then sizzle in a pan until heated through properly. 

Then pack into fajitas with fresh salad, grated vegetables, soured cream and cheese for a tasty, quick family meal idea.

If you’re feeding a crowd add some fajita side dishes.
