  • 2kg potatoes – peeled and cut into cubes for boiling
  • 50g butter
  • 100-150ml milk or cream (you may need more or less depending on how dry/wet your mashed potatoes are)

  • 150g Cheddar cheese – grated
  • salt and pepper to taste

How to make Mexican Cottage Pie

Our spicy cottage pie recipe is super simple to make

I use a big cast iron pan (one with a lid) that I can use both on the hob and in the oven to make this recipe – but if you’ve not got one, no worries – just make the chilli in a saucepan and then tip into an oven proof dish with a lid to bake in the oven.

  • Preheat the oven to 180C
  • Add the olive oil to the pan and throw in the garlic, red onion and chilli and fry for 5 minutes until softening.

  • When the chilli con carne cottage pie filling has 30 minutes left to cook start cooking the potatoes – boil them in salted water, cooking for around 20 minutes or until tender.
  • Drain the potatoes and mash with the butter, a handful of the cheese and add a splash of milk/cream until they are nice and fluffy.
  • Remove the spicy meat filling from the oven and top with the mashed potatoes. Then sprinkle on the nachos – sticking them into the potatoes as you go. And finish by topping with the rest of the cheese.

What goes with cottage pie?

We love to add a side or two of vegetables with our Chilli Con Carne pie and if I’m feeding a crowd and need to really bulk up I’ll throw a couple of garlic baguettes in the oven too.

  • Steamed broccoli and cauliflower work well with cottage pie.
  • Kids just love peas and sweetcorn mix on the side.
  • And if you’re feeling a bit traditional you just can’t go wrong with a jar of pickled red cabbage and a jar of pickled beetroot.
