Cooking up a delicious one pot brisket is a great recipe for feeding a family.

It’s a cheaper cut of meat and cooking it in the slow cooker really ensures it comes out tender, tasty and literally falling apart.

Perfect for serving as roast beef dinner on a Sunday. Plus we’ve got loads of tasty ways to turn the leftovers into a delicious new meal.

To cook up the one pot brisket you’ll just need a few ingredients and about 10 minutes in the morning to throw them all together.

I serve the brisket with mashed potatoes, vegetables and pour over the tasty gravy.

Slow Cooker Brisket and Gravy

Super easy pot roast that's perfect for traditioal Sunday Dinner

Prep Time 10 minutes
Cook Time 8 hours
Total Time 8 hours 10 minutes

Ingredients

  • 2 tsp olive oil 
  • 2 onions
  • 4 carrots 
  • 1.5kg brisket joint
  • 300ml beef stock

Instructions

  1. Preheat the slow cooker to low
  2. Grease the inside of the slow cooker pan using the olive oil
  3. Add the chopped onions to the bottom of the slow cooker pan.
  4. Lay the carrots on top of the onions
  5. Lay the brisket joint on top of the vegetables
  6. Pour over the hot beef stock
  7. Cook on slow for around 8 hours until the beef is cooked through properly and super tender.
  8. To thicken the gravy - remove the beef brisket and carrots then thicken using a tsp of cornflour that's been mixed with a drop of cold water - simmer over a medium heat until gravy thickens.

Easy Leftover Beef Fried Rice

Make the most of the leftover brisket with this Chinese style egg fried rice.

You can make this even if you only have a small amount of leftover beef. Just bulk up on the extra veggies to make the meal go further.

Homemade Shredded Leftover Brisket Topped Pizza

Use your leftover shredded brisket to top shop bought or homemade pizza base.

If home baking isn’t your thing – or you simply can’t be bothered with the faff – use muffins, pittas or naan bread as pizza bases. Spread them with tomato base sauce and scatter over the shredded leftover beef.

Add any other toppings you like, try olives, jarred peppers or finely sliced red onion.

Then scatter over some cheese – use mozzarella, strong Cheddar or even blue cheese. Then bake and eat.

Brisket Cottage Pie

Simply fry some chopped onions. Add in strips of leftover beef and handful of frozen peas. Then pour oven enough beef stock to just cover the pan contents.

Bring to the boil and cook for 5 minutes, thicken the gravy using cornflour then put into an ovenproof dish and top with mashed potatoes. Bake in the oven on 200C until potatoes are browning.

Split open a freshly baked French baguette, butter and fill with shredded leftover brisket and a smattering of mustard.
